Additional Information: Lapsang Souchang is distinct from 28 types of tea because lapsang leaves are traditionally smoke-dried over pinewood fires, taking on a distinctive smoky flavor. While second to green tea, black teas are still rich in antioxidants and recent studies show black tea also displays many health benefits. Foojoy Organic Lapsang Souchong is a black tea from the Wuyi region of the Chinese province of Fujian. Legend states that during the Qing Dynasty, an army unit passing through the area delayed the annual drying of tea fresh tea leaves. Realizing it was too late to dry the leaves the usual way, open fires of pinewood were lit to hasten the drying. The true story is that the drying process was used to allow the tea to survive the long boat trip from China to Europe in the early 17th Century. This particular Lapsang has a strong smoky aroma but a rich but more refined and mellow flavor. Its smokiness is accompanied by the lingering and mildly sweet flavor of Longan fruit.
We recommend using clay or porcelain tea ware. Rinse teacup and teapot with hot water. Use about 1-2 teaspoons of tealeaves for every cup of water. Steep tealeaves in hot water at 212°F (100°c) for 1 minute for the first and second brewing. Gradually increase steeping time for subsequent brewing. You may also enjoy it with milk and/or honey.
Water for Tea: Cold, clear, pure water is recommended and tap water, especially hard water, is to be avoided. Fresh spring water is ideal. Filtered water is also desirable. Hard water or strong tasting water will obliterate even the most delicious tea.
